Today’s summary Took Val to the airport to go skiing in Austria then spent the rest of the day working on tax, making marmalade, and cooking Lough Avalla beef for the next few days’ evening meals

Commentary

(Summary blog only.   Last full blog was Day 0368).

Took Val to the airport first thing this morning – she’s going to Austria for a few days ski-ing (although there isn’t much snow!), returning a week on Monday.

After dropping her off, I stopped in at Tesco Swords for a few key essentials then returned to the flat to do some more tax-related paperwork.

Once that was out of the way, I started tackling the third batch of 2023 marmalade.   I keep adapting the recipe as I go along – now I have wax disks (instead of molten candle wax) for sealing the jars, and a proper muslin square for boiling the pith.    I’m also scraping off more pith from the peel, so the finished product is much clearer.   But I’m not totally satisfied with the set.   It’s a bit too syrup-like, and not jelly-like enough and I don’t really know why.   I’ll just keep experimenting – there are still 2 more batches to go.

In between peeling, shredding and juicing, I prepared some vegetables and roast some more of the Lough Avalla beef – so now I have ready made-up meals for the next three days.   I’m feeling very domesticated and moderately smug at the moment.
