It feels to me like there is an awful lot of paperwork flying about at the moment. Or at least I seem to be spending an inordinately large amount of time dealing with it. So – like yesterday, much of the day was spent in front of the computer, filling in forms and making phone calls.

Anyway, the rain poured down outside all day, so being stuck indoors was not really a big hardship. Neither of us had much inclination to go out and get soaked, so we stayed in and kept dry.

Eventually, it started to get dark so we thought about dinner. We plumped for a nice Kerrigans chicken stir fry, which we had with mashed potato and roast vegetables. Tasty, quick and delicious! Thanks to Val for pulling it together so quickly and effortlessly.

The rest of the evening was a TV evening. We’re currently re-watching “The Windsors” on Netflix for the umpteenth time, and thoroughly enjoying it. A bit of light humour inside is just what we need to get us through the gloomy weather outside!
